To be honest, I don’t like coffee without acidity.

I have a real taste for bright, lively, and expensive coffees.

Even so, I found this coffee really enjoyable.

In fact, I could see myself drinking it every day.

STORY

The coffee of the gods—Panama Geisha. Personally, I believe Geisha represents the “Fourth Wave” of coffee.

This marked the arrival of a true high-end world in coffee. It’s Panama that gave birth to coffees that can fetch 10 million KRW (about $7,500 USD) per kilogram.

Naturally, this phenomenon began to influence various sectors of Panama’s agricultural community. As a result, “Pergamino” was born.

Janet, who leads Pergamino, participated in her first official cupping this year (2025). Amusingly, she planted Catuai and Bourbon at higher altitudes, and—just off to the side, in a potato patch—she planted Geisha coffee trees!

If it were me, I’d have done the opposite… So now, Pergamino’s Bourbon and Catuai grow above 1,900 meters altitude.

The result is coffees with truly refined acidity. While they might not match Geisha’s fragrance, the high altitude and blessed terroir give these coffees exceptionally elegant acidity and a distinctive body.

Enjoying this coffee, I thought to myself:

“This would make for an incredibly luxurious Americano or latte. Even those who don’t usually like acidity could discover a new dimension of great coffee here. It’s definitely something I’d recommend!”
The result… is this extraordinary coffee.

Introducing Pergamino ‘Dark Mode’—exclusively available at Blackroad. (And who knows, there might even be a touch of Geisha blended in!)
